Rule of 3 pancakes

I like my recipes easy to remember, the last thing I have time for with a baby on the hip, a toddler 'helping' and 3  middle aged children underfoot is to need to hunt up a recipe card.

Hence all my recipes are 'around' or the list the ingredient but not the amount.  For dinner this generally works well,  meatloaf is meatloaf weather you put two shakes or 4 of garlic.  But some recipes need a bit of precision.

You might think I would actually keep a card handy to read, but in reality, I try to fudge the recipe to make it super easy to remember.

Hence the 'Rule of 3 Pancakes'.

Currently I use:

3 sticks of butter (I like butter, one for greasing pan)

3 cups of flour
3 teaspoons of baking soda
3 eggs
3 cups milk
1/3 cup honey

First you put two sticks off butter in the pan to melt, one reserved to grease pan between batches.

mix the three cups flour and 3 teaspoons baking soda
add in three eggs, beat with a fork
mix in 1/3 cup honey and 3 cups milk

Cook in batches using the 1/3 cup measure.

I have no idea how long they cook for, I am generally doing something else, like cleaning the kitchen, or changing diapers.  I just peek at them in between jobs and flip when needed.

They are thiner than I prefer, but very soft and buttery, lovely taste, just not thick and hearty.
I like thick, my family likes thin, they kinda outnumber me.  (Used the same rule of three for thick, but it was 'three scoops of milk = 1.5 cups and 1/3 cup melted butter plus greasing)

I constantly adjust the recipe for my mood, and if I learned anything, but this particular formula has lasted a bit.
