requested pumpkin cookie recipe

I made these for church dinner on Wednesday and someone requested the recipe.  Unfortunately they asked for it, because I am usually a very low sugar baker and they thought the cookies would be healthy.  Sad to say they are whole wheat, but not particularly healthy.  One of these days I plan to switch from sugar to some other sweatner,  but so far I haven't done so.


Oh and as always ingredients are rather approximate.  Sugar means brown sugar, flour means whole wheat flour.
Also we are a family of 5, so all recipes are for a whole boatload.

Pumpkin cookies (adapted from a Joy of Cooking pumpkin bread recipe)

Preheat oven to 350

Cream 2 sticks of butter (what is that a cup?)
2 cups of sugar (I said this wasn't healthy)

Then mix in two beaten eggs (just crack them in there, beat em in the corner, then turn the kitchenaid on again)
and mix in one can of pumpkin (I think it is around 14 oz?)

Dump 2 cups of flour on top
without messing with the liquid glop on the bottom stir in:
1/2 tsp baking powder (or close to it, I don't have a measuring spoon)
2 tsp baking soda (or something close)
1/2 tsp ground
some nutmeg, cause I brought it over and no sense wasting the trip
1 tsp cinnamon, oh toss a smidgen more in, everyone loves that stuff (except my Sister in law who is allergic)

Pour 2/3 cup milk in a measuring cup, add around 1tsp vanilla

Turn the kitchenaid on to mix in all the flour stuff, and pour over the vanilla milk. then turn it off

Add in 1 and 1/2 cup more flour, mix for 2 seconds, then turn it off and finish with a spatula.

Place on a baking stone  for around 10 minutes.  They will smell done, and the whole house will smell delicious.  Then you have just enough time to put down the baby with a toy, convince the toddler to sit at the table with some apple, and find an oven mitt, oh forget it just use a folded towel.  There see perfect timing.

They are kinda sticky, not sure how a regular sheet would do.  My stones are wonderful.  Even sticky cookies clean up super easy.

Alternately you could stick them in muffin wrappers and bake a smidgen more. Prolly at a smidgen hotter, say 425?

I am sorry this isn't easier to follow.  Wait till I put the apple cobbler one up.  That stuff was yummy, and easy.
