Every year for our church family carol and cookies we make a gingerbread house. Well we have for 3 years now anyway.
Every year I experiment with a different recipe trying to find the perfect dough. Easyish to work with, tastes good and simple to build a house out of. So far no luck.
This year I went to google and came up with this soft gingerbread cookie recipe. I know it doesn't say it is for a house, so there is a good chance it wont work and I will have a mess tonight, but. I like to try new things.
I read the reviews and decided to try using a whole stick of butter. I also happened to be out of brown sugar, so I went with honey instead. Plus I have a heavy hand with spices.
Between the honey and the extra butter the use of whole wheat flour was no trouble. I shall find out how well it rolls in about an hour.
tick tock, tick tock.....
Ok rolled very well, easy to work with, not to sticky though a smidgen crumbly still. Make that I had no trouble, Princess is lousy with the rolling pin still. I guess I don't get her enough practice!
We rolled and cut and baked just fine. I did have to bake the larger pieces a bit to long for the best flavor, though the smaller cookies were wonderful.
I used a slightly stiffer than usual icing 'glue', and it not only tasted better, but was better at holding things up, though much harder to work with..
If I happen to remember this recipe next year I will try to use it again, though the chances of that are slim!
Actually we have to make a second batch before Sunday for a friend, they did a favor for us, and when their son saw our house he had huge excited eyes and wondered if it was for them, so since the first had to go to the church, we are going to make them a little one.
